Got to sleep in!
Picked the first tomatoes of the season from our garden!
Made a fresh tomato sauce (w/basil from the garden) with those tomatoes for lunch----fresh tomato sauce and pasta, sprinkled with fresh parmesano reggiano!
Was grateful my Mom (who is passed) taught me how to cook.
Fresh Tomato Sauce
Add about 2-3 Tablespoons olive oil to the pan.
Cook 1 small Vidalia onion (diced) in the olive oil till softened.
Add 1 clove of garlic till fragrant.
Have your fresh garden tomatoes peeled, chopped and ready for the pan. I used about five nice sized tomatoes.
Add to the pan.
Add your seasonings---dry basil (or fresh), dry oregano, salt, to taste.
Cook till reduced and thickened bit.
Add your cooked pasta----sprinkle with parmesan.
Voila! Delicioso! Mangia!
