Any cooks or ideas for a Thank You recipe?

Hi all.

My parents have just been super awesome during all of my anxiety. I'm not much of a talker, so things can get awkward that way. But I thought it would be nice to surprise them with like a thank you cake or something to help show my appreciation. The problem is my mother is on a "diet". Nothing overtly strict. She just prefers healthy things. My father isn't much of a cake person. In fact, I made a cake for his birthday in January, and I had to finish the cake off by myself because nobody was eating it, and it was going stale! I'm not much of a cake person either, but I made the darn thing, so I sure as heck ain't going to waste it! :laugh3:

Anyway, I've been trying to think of something to make for them and am just tossing my thoughts around in the hopes somebody has a really good idea.

My kids love fruit skewers...a healthy sweet.

You can get a fruit tray from your local grocery store (or cube a bunch yourself: melons, pineapple, grapes), then put them on bamboo (or wooden) skewers.  Freeze the skewers on a cookie sheet, then drizzle some melted chocolate over them and keep them frozen until you want to serve.  Easy-peasy.   :happy0151:

Maybe some apple crumble? Or any other fruit (blueberry, raspberry, etc). I know it's not REALLY healthy but man, it's good. It's a sweet with fruit in it so where can you go wrong!

What about making chocolate truffles? They're ever so easy, look great and taste wonderful. This receipe is by Nigel Slater of The Guardian UK.

Chop 225g of fine dark chocolate into small pieces about the size of gravel, then put it into a heatproof china or glass bowl. Pour 135ml of double cream into a small saucepan and heat gently. As the cream approaches the boil, remove from the heat and pour over the chopped chocolate, stirring slowly until melted. Put the mixture in the fridge for an hour to chill. Remove heaped tablespoons of the mixture and roll very gently into balls or small logs. Drop into cocoa powder and roll them around gently to cover, then remove and serve. Makes 15 large truffles.
